marzipan muffins
GAPS Intro Diet. Day 23. Stage 4.
Get excited people! Marzipan muffins are where it's at! That is if you can digest them. Can't say I have had too much success in that area of late, but I still make them for Mike [out of l-o-v-e of course]. More on my struggles with almonds in my next journal entry.
Until then, enjoy these - with your eyes at least!
marzipan muffins
makes 8-10 muffins
3 eggs
1/8 cup raw honey
1/2 tsp vanilla bean powder or extract
1 tbsp ghee
2.5 cups almond flour*
1/2 tsp aluminum free baking powder
zest of 1 lemon or orange
1/2 tsp celtic mineral sea salt
Preheat the oven to 325 degrees Fahrenheit.
In one bowl, combine and beat the wet ingredients. In another, mix the dry ingredients. Gently fold the dry ingredients into the wet, mixing just until combined. Do not over mix.
Spoon into muffin cups [I love my silicone cups]. Put on a baking sheet and bake in the oven for 10-15 minutes or until just set. These babies should be moist, so don't over bake'm.
Enjoy for breakfast or as a mid morning snack - they're the perfect GAPS legal snack.
*I started by using blanched almond flour, but was having difficulty digesting it. I changed to making my own flour from raw, sprouted, dehydrated almonds and this served to be easily digested [score!]. Try either and depending on your reaction, adjust. Everyone is different....
