chard and fennel soup


GAPS Intro Diet.  Day 22.  Stage 1.

Soups become a mainstay when you're going GAPS.  You come up with all kinds of interesting combinations - out of necessity mostly.  When those combinations become a bit boring, try blending your soups.  An immersion blender, regular blender or food processor can take your recipes to a whole new level.

chard and fennel soup
serves 2

1 large bunch chard, leaves torn, stalks discarded
1 large bulb fennel, chopped
1-2 leeks, white parts chopped
2-3 carrots, diced
1 quart chicken stock, beef stock or bone broth
ghee
celtic mineral sea salt

Add a few spoonfuls of ghee to a heavy pot over medium heat.  Saute the leeks and fennel for 5-10 minutes or until translucent.  Add the carrots and stir for a few minutes more. 

Add the stock or broth and bring to a simmer.  Continue to cook for 5-10 minutes or until carrots are just tender.  Add the chard and cook until the greens are wilted.

Season with sea salt as desired, blend and serve.
